Like cantaloupe, tomatoes are one of the highest sources of vitamin C. Vitamin C is an antioxidant, which helps fight free radicals caused by the sun. Free radicals can damage your skin, but antioxidants can protect your skin by helping it to repair itself quickly. You already know you can enjoy tomatoes in a fresh salad, but have you tried them for breakfast? Slice the top off a medium tomato and remove the seeds. Sprinkle the inside with some Parmesan cheese. Then pour in a beaten egg seasoned as you like it. Bake it in a shallow pan at 400 degrees until egg is set.
